We had mac and cheese with spam and a topping of some breadcrumbs with smooshed up rainbow goldfish mixed in! 🙂 It made for a very creamy and crunchy mac and cheese. I used cheddar cheese mixed in with the evaporated milk and then after the pasta was cooked I drained it and then mixed in the last of the mozzarrella cheese we had in the house..about a cup. Then added the milk with cheese and spam. Topped with the breadcrumbs and goldfish and put in the oven for about 20 minutes at 375*F. This is what my father used to make all the time. But he usually just used cheddar and breadcrumbs. 🙂 But the goldfish sure made it look colorful!
